These creamy chicken enchiladas are the weeknight dinner that disappears fastest at my table: soft flour tortillas rolled around juicy seasoned chicken, blanketed in a silky red sauce and a thick layer of bubbling cheddar.
The trick is a quick homemade sauce that tastes like it simmered all afternoon, plus a sour cream drizzle stirred in right at the end so the filling stays rich without splitting. Warming the tortillas before rolling means no cracks and no mess.
Serve them straight from the dish with rice, a crisp salad, or just extra lime wedges on the side.
Ingredients
For the chicken filling
- 500 g (about 3 cups) cooked shredded chicken breast or thigh
- 200 g (¾ cup) cream cheese, softened
- 100 g (1 cup) grated cheddar cheese, divided
- 60 g (¼ cup) sour cream, plus extra to serve
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp dried oregano
- Salt and black pepper to taste
To assemble
- 8 large flour tortillas (about 20 cm / 8 inch)
- 400 g (1⅔ cups) red enchilada sauce
- 2 tbsp chopped fresh coriander (cilantro)
- ½ small red onion (60 g), finely diced
- Lime wedges, to serve
Instructions
- Heat the oven: Preheat the oven to 200°C (400°F). Lightly grease a 23 x 33 cm (9 x 13 inch) baking dish.
- Make the filling: In a large bowl, mix the shredded chicken, cream cheese, half the cheddar, the sour cream, cumin, smoked paprika, garlic powder, oregano, salt and pepper until evenly combined.
- Warm the tortillas: Wrap the tortillas in a damp tea towel and microwave for 45 seconds, or warm one by one in a dry pan. Soft tortillas roll without tearing.
- Fill and roll: Spoon about ⅓ cup of filling down the centre of each tortilla, roll up tightly and place seam-side down in the baking dish.
- Sauce and cheese: Pour the enchilada sauce evenly over the rolls, covering every edge, then scatter the remaining cheddar over the top.
- Bake: Bake for 20–25 minutes until the sauce is bubbling at the edges and the cheese is golden with a few browned spots.
- Garnish and serve: Rest for 5 minutes, then drizzle with extra sour cream and scatter over the coriander and diced red onion. Serve with lime wedges.
Tips for the best result
- Cover the ends of the rolled tortillas with sauce — any dry edge goes crisp in the oven.
- Use rotisserie chicken to cut the prep down to 10 minutes.
- Swap the cheddar for Monterey Jack or a Mexican cheese blend for extra stretch.
- For a spicier version, add a finely diced jalapeño to the filling.
Storing and reheating
Cool leftovers within 1 hour and refrigerate in a covered dish for up to 3 days. Reheat covered at 180°C (350°F) for 15–20 minutes, or microwave individual portions. Freeze unbaked, wrapped tightly, for up to 2 months; thaw overnight in the fridge before baking.
Frequently asked questions
Can I make creamy chicken enchiladas ahead of time?
Yes. Assemble the dish, cover and refrigerate for up to 24 hours, then bake straight from cold, adding 5–10 minutes to the baking time.
Why are my tortillas cracking when I roll them?
They were too cold or too dry. Warming them first makes them pliable — stale or fridge-cold tortillas will always split.
Can I use corn tortillas instead of flour?
You can, but warm them in a little hot oil first so they stay flexible and don't break during baking.
Is there a substitute for cream cheese?
Soft ricotta or a thick plain Greek yoghurt works, though the filling will be slightly less rich.
