Tres leches means three milks, and this cake drinks them up: a light vanilla sponge soaked in sweetened condensed, evaporated and whole milk until every bite tastes like custard.
Do not let the milk soak scare you. The trick is a warm, fresh sponge — poke it all over with a skewer and pour the mixture slowly so it seeps in evenly.
Finished with billowy whipped cream and a dusting of cinnamon, this is the kind of dessert that disappears at every gathering.
Ingredients
- 185 g (1 1/2 cups) all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp fine sea salt
- 5 large eggs, separated
- 200 g (1 cup) granulated sugar, divided
- 80 ml (1/3 cup) whole milk
- 1 tsp vanilla extract
Three-milk soak
- 395 ml (1 can / 14 oz) sweetened condensed milk
- 360 ml (1 can / 12 oz) evaporated milk
- 120 ml (1/2 cup) whole milk
To finish
- 360 ml (1 1/2 cups) heavy cream, cold
- 3 tbsp powdered sugar
- Ground cinnamon and sliced strawberries, to serve
Instructions
- Bake the sponge: Heat the oven to 175°C (350°F). Grease a 23×33 cm (9×13 in) pan. Whisk the flour, baking powder and salt. Beat the egg yolks with 150 g (3/4 cup) sugar until pale and thick, then whisk in the milk and vanilla. Fold in the flour mixture just until combined.
- Whip the whites: Beat the egg whites to soft peaks, then beat in the remaining 50 g (1/4 cup) sugar until glossy. Fold one-third into the batter to lighten it, then fold in the rest gently. Spread in the pan and bake 28 to 32 minutes, until golden and springy when touched.
- Soak in three milks: Whisk the sweetened condensed milk, evaporated milk and whole milk. While the cake is still warm, poke holes all over with a skewer or fork. Pour the soak slowly over the whole surface — it will look like too much; it is not.
- Chill: Cool to room temperature, then cover and refrigerate at least 4 hours or overnight so the soak absorbs completely.
- Whip and serve: Beat the cold cream with the powdered sugar to firm peaks. Spread over the chilled cake, dust with cinnamon and top with sliced strawberries. Cut into squares and serve cold.
Tips for the best result
- Pour the soak over a warm cake so it absorbs evenly instead of pooling.
- Whip the cream only to firm peaks; overbeaten cream turns grainy on the chilled cake.
- For the cleanest squares, chill the assembled cake and dip the knife in hot water between cuts.
Storing and reheating
Store covered in the fridge for up to 3 days. The texture is actually best on day 2. Do not freeze — the milk soak separates when thawed.
Frequently asked questions
How do I know the cake absorbed the milk soak?
The sponge looks almost too wet when you pour the milks over, but that is the point. It will absorb everything and turn custardy after 4 hours of chilling.
Can I make tres leches ahead?
Yes. The whipped cream layer keeps well for a day, so you can bake the sponge up to 2 days ahead and soak it the day before serving.
Can I use only two milks?
Whole milk keeps it rich but lighter. Evaporated milk alone gives the deepest flavor; do not skip the sweetened condensed milk, which is what makes it tres leches.
Does it need to be refrigerated?
Keep it in the fridge. It stays good for 3 days and the texture is best on day 2, once the soak has fully settled.
