French onion chicken takes everything people love about French onion soup — sweet, slow-caramelized onions, a rich beefy broth and a blanket of bubbling Gruyère — and turns it into a proper weeknight dinner.
The onions do most of the work here. Give them a good 20 minutes over gentle heat until they turn deep golden and jammy, then the rest of the dish comes together in one pan in about half an hour.
I first saw this version doing the rounds on TikTok, and it earned its viral status honestly: juicy seared chicken, a glossy onion sauce and that golden cheese pull when you lift a spoonful out of the skillet.
Ingredients
- 4 boneless, skinless chicken breasts (about 700 g)
- 1 tsp fine sea salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 3 large yellow onions, thinly sliced (about 600 g)
- 1 tsp sugar
- 3 garlic cloves, minced
- 1 tbsp plain flour
- 120 ml (1/2 cup) dry white wine
- 240 ml (1 cup) beef stock
- 1 tsp Worcestershire sauce
- 1 tsp fresh thyme leaves, plus extra to serve
- 150 g (1 1/2 cups) Gruyère cheese, grated
Instructions
- Season the chicken: Pat the chicken breasts dry and season all over with the salt and pepper.
- Sear: Heat the olive oil in a large ovenproof skillet over medium-high heat. Sear the chicken for 5 to 6 minutes per side until deeply golden. Transfer to a plate.
- Caramelize the onions: Lower the heat to medium, melt the butter and add the onions with the sugar and a pinch of salt. Cook, stirring often, for 18 to 20 minutes until deep golden and jammy. Stir in the garlic and cook for 30 seconds.
- Build the sauce: Sprinkle over the flour and stir for 1 minute, then pour in the wine and let it bubble for 1 minute, scraping up the browned bits. Add the beef stock, Worcestershire sauce and thyme, and simmer for 3 minutes until slightly thickened.
- Top and bake: Return the chicken to the pan, spoon the onions over the top and scatter with the Gruyère. Bake at 200°C (400°F) for 10 to 12 minutes until the cheese is bubbling and golden and the chicken reaches 74°C (165°F) inside.
- Rest and serve: Let the pan stand for 5 minutes, then scatter with extra thyme and serve straight from the skillet.
Tips for the best result
- Slice the onions evenly so they caramelize at the same pace — a mandoline helps.
- If the onions start to catch, add a splash of water and turn the heat down rather than stirring harder.
- Pound thicker chicken breasts to an even 2 cm so they cook through without drying out.
Storing and reheating
Cool and refrigerate in an airtight container for up to 3 days. Reheat gently in a covered skillet over low heat with a splash of stock until hot through; the cheese will melt again nicely.
Frequently asked questions
Can I make French onion chicken ahead?
Yes. Caramelize the onions the day before and keep them in the fridge, then assemble and bake the chicken the next evening.
Is this dish very oniony?
No. The onions turn sweet and jammy as they caramelize, so the dish is rich and savoury rather than sharp.
What cheese can I use instead of Gruyère?
Gruyère melts best, but Emmental, Swiss or a mild provolone all work. Mozzarella melts well too, though it is less nutty.
What should I serve with it?
Mashed potatoes, buttered noodles, crusty bread or a simple green salad — anything that can soak up the onion sauce.
