This is the one-skillet dinner all over my feed this month, and it earned every single view. Golden, crispy chicken thighs get lacquered in a sticky hot honey glaze, then buried under salty crumbles of feta that melt right into the sauce.

The contrast is what makes it: sweet heat from the honey and chili, cool creaminess from the feta, and a squeeze of lemon to keep it all bright. Everything happens in one pan, and dinner is on the table in about 35 minutes.

Ingredients

  • 800 g (about 1 3/4 lb) boneless, skinless chicken thighs (8 small thighs)
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 80 ml (1/3 cup) honey
  • 1 tbsp hot sauce, plus more to taste
  • 1/2 tsp red pepper flakes, plus extra for garnish
  • 150 g (5 oz) feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped

To serve

  • Lemon wedges

Instructions

  1. Season the chicken: Pat the thighs completely dry with paper towels. Rub all over with the salt, pepper, garlic powder and oregano.
  2. Sear: Heat the olive oil in a large oven-safe skillet over medium-high heat until shimmering. Add the thighs and sear for 4 to 5 minutes per side, without moving them, until deeply golden and crisp. Transfer the skillet to a 200 C (400 F) oven for 8 to 10 minutes, until the chicken reaches 74 C (165 F) inside.
  3. Make the glaze: While the chicken finishes, warm the honey, hot sauce and red pepper flakes in a small pan over low heat for 2 minutes, just until loose and glossy. Do not boil it.
  4. Glaze and finish: Spoon the hot honey glaze over the chicken in the skillet, letting it pool around the edges. Scatter the feta over the top while everything is still sizzling so it softens into the sauce. Rest for 5 minutes, then finish with parsley, extra red pepper flakes and lemon wedges.

Tips for the best result

  • Dry chicken sears better: moisture is the enemy of crisp skin and a golden crust.
  • Use a real block of feta in brine and crumble it yourself — it melts into the glaze far better than pre-crumbled.
  • Taste your hot sauce before adding it: swap in half the amount if yours runs very hot.
  • Serve over warm flatbread, couscous or rice to catch every drop of the glaze.

Storing and reheating

Cool within 1 hour and refrigerate in a sealed container for up to 3 days. Reheat gently in a covered skillet over low heat with a splash of water until steaming hot. Freezing is not recommended, as the feta texture suffers.

Frequently asked questions

Is hot honey feta chicken very spicy?

It is warm rather than fiery. The honey and feta tame the chili, and you can cut the hot sauce in half for a milder version.

Can I use chicken breast instead of thighs?

Yes, but thighs stay juicier. If you use breast, pound it to even thickness and shave a few minutes off the oven time so it does not dry out.

What can I use instead of hot sauce?

Stir the red pepper flakes into the honey and add a teaspoon of vinegar or lemon juice for the tang.

Does the feta melt completely?

No, and that is the point — it softens into salty, creamy pockets rather than disappearing, which gives the dish its signature texture.
