These crispy beef tacos are the weeknight dinner that disappears first: golden, crunchy shells, well-seasoned beef, melted cheese and a cool, zesty cilantro lime sauce for dunking.
The trick is a hot, lightly oiled pan and patience — press the filled tortillas down, let them crisp properly, and only flip once. The cheese melts into the beef and helps seal each taco shut.
Serve them straight from the pan with lime wedges and extra sauce, while the shells are still crackling.
Ingredients
- 500 g (1.1 lb) ground beef
- 1 small onion, finely diced (about 100 g)
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp chilli powder
- 0.5 tsp dried oregano
- 0.5 tsp salt
- 0.25 tsp black pepper
- 120 ml (0.5 cup) beef stock or water
- 8 small corn or flour tortillas
- 150 g (1.5 cups) grated cheddar or Monterey Jack cheese
- 2 tbsp vegetable oil, for frying
For the cilantro lime sauce
- 120 g (0.5 cup) sour cream or Greek yogurt
- 1 small bunch cilantro (about 30 g), leaves picked
- Juice of 1 lime
- 1 tbsp mayonnaise
- 0.5 tsp garlic powder
- Salt, to taste
To serve
- 1 cup shredded lettuce
- 1 tomato, diced
- Lime wedges
Instructions
- Make the sauce: Blend the sour cream, cilantro, lime juice, mayonnaise and garlic powder until smooth and pale green. Season with salt, then chill while you cook.
- Brown the beef: Heat a large skillet over medium-high heat. Cook the beef and onion for 5–6 minutes, breaking the meat up, until browned and the onion is soft.
- Season: Stir in the garlic, tomato paste, cumin, smoked paprika, chilli powder, oregano, salt and pepper. Cook for 1 minute until fragrant, then pour in the stock and simmer for 4–5 minutes until thick and saucy, not wet.
- Fill the tortillas: Lay a tortilla flat, spoon 2–3 tablespoons of beef over one half, scatter with cheese, and fold in half. Repeat with the rest.
- Crisp the tacos: Wipe the skillet clean, add a little oil over medium heat, and cook 2–3 tacos at a time, pressing gently with a spatula, for 2–3 minutes per side until deep golden and crisp.
- Serve: Open each taco slightly, tuck in lettuce and tomato, and serve at once with the cilantro lime sauce and lime wedges.
Tips for the best result
- Keep the beef filling fairly dry — wet filling makes soggy shells.
- Corn tortillas crisp up best; warm them briefly first so they fold without cracking.
- Hold finished tacos on a wire rack in a low oven (120°C / 250°F) while you fry the rest.
Storing and reheating
Store leftover beef filling in the fridge for up to 3 days and crisp fresh tacos as needed; assembled tacos go soft quickly. Reheat the filling in a skillet and build new tacos rather than reheating assembled ones.
Frequently asked questions
Can I make these tacos ahead of time?
Yes — make the beef and sauce up to 2 days ahead and keep them chilled, then fill and crisp the tacos just before serving.
How do I stop the tortillas cracking when I fold them?
Warm them for 20–30 seconds in a dry pan or the microwave under a damp cloth so they bend easily.
Can I bake the tacos instead of frying?
Yes. Brush both sides lightly with oil, arrange on a baking sheet, and bake at 200°C (400°F) for 12–15 minutes, flipping once, until crisp.
